Yet, we are not satisfied with merely that; continuing our exploration of Parmesan’s varied flavors, we’ve created the Grand Parmasen, a cheesecake made with 36-month aged Parmesan. Despite being made without butter, it has an extraordinarily fine, velvety texture. Low in sweetness with no graininess, the top layer is meticulously brûléed to enhance the overall flavor with a complex, multi-layered profile.
